An enclosed cabinet is a bun pan rack with walls and doors. The frame, shelves and casters are the same as an open rack, so it holds pans in exactly the same way. The difference is that the product is protected from dust, draughts, insects and wandering hands while it moves between rooms, between buildings or between the bakery and the store.
Moving finished product through a loading dock, corridor or yard where open product would be exposed.
Holding proofed dough where a draught would skin the surface before baking.
Cooling and holding where air movement is inconsistent across the room.
Delivery to retail stores, hotels and catering sites on a shared vehicle.
Storing product overnight in a room that is not a dedicated food store.
A pan rack cover is a fabric or vinyl sleeve that drops over an open rack. It is light, stows away when not in use and costs far less than a cabinet. It also has to be removed and stored every time the rack is loaded, and it does not protect against impact or rough handling.
| Requirement | Pan rack cover | Enclosed cabinet |
|---|---|---|
| Dust and insect protection | Good | Excellent |
| Temperature holding | Limited | Better, especially in a closed room |
| Protection from impact | None | Good |
| Loading speed | Slower, cover must be moved | Fast, doors open on the load side |
| Storage when idle | Easy to fold away | Takes floor space |
| Relative cost | Low | Higher |
Many bakeries use both. Covers are ideal for racks that stay inside one room, while cabinets handle the trip to the van and the store.
Single full height door: the simplest design and the most economical. One operator can load from one side.
Double doors, side by side: both halves open independently, which suits narrow aisles where a full width door cannot swing.
Sliding doors: they do not obstruct an aisle at all, and they suit high traffic corridors.
Removable front panel: the fastest loading and unloading, with the panel stored on hooks when not needed.
Aluminum keeps the cabinet light enough for one person to move, which is why it is the usual choice for front of house and delivery work. Stainless steel 304 is the right answer in washdown rooms, meat and seafood areas, and anywhere caustic sanitisers are used. Whichever you choose, ask about the hinge and latch material, because that is where corrosion usually starts.
Soft rubber casters for tiled production rooms, where quiet running and floor protection matter.
Hard nylon casters for loading docks, yards and cold stores, where grit wears soft wheels quickly.
Two braked swivel casters and two fixed casters for predictable steering on a slope.
A larger wheel diameter, usually 125 mm or more, for ramps, drains and expansion joints.
An enclosed cabinet has more surfaces than an open rack, and drawers, hinges and latches are where residue collects. Confirm that the doors lift off or swing wide enough to reach the inside corners, and that the shelf supports can be removed for a full wash. In a washdown room, specify stainless steel and sealed fasteners.
Pan size, pan count and required shelf spacing.
Overall height measured against the lowest opening on the route.
Door style chosen for the aisle width at the loading point.
Frame material matched to the cleaning routine.
Caster type matched to the floor surface and any slope.
Whether the cabinet must roll into a proofer, an oven carriage or a vehicle.
