Bun Pan Rack Maintenance: An OEM Care Guide

Why maintenance pays

A rack is one of the cheapest items in a bakery and one of the hardest working. Ten minutes of routine care each week is usually enough to add years of service and to keep racks out of the sanitation report.

Daily routine: about two minutes per rack

  • Wipe down frames and shelf supports with warm water and a mild detergent after the last bake.

  • Check that every shelf holds its pan without rocking, and remove debris trapped in the shelf clips.

  • Sweep or hose the floor, because grit is what wears casters out.

  • Report a wobbling caster the same day instead of waiting for it to seize.

Weekly checks

  • Inspect all welds around the corner posts and the caster mounting plates for cracks or rust stains.

  • Test each caster for flat spots, thread wrap and free rotation.

  • Check that brakes still hold on a slight slope.

  • Confirm that pan stops, if fitted, are still tight.

Deep cleaning aluminum racks

Use warm water with a mild detergent and a soft brush. Rinse well and dry in air. Do not use caustic based oven cleaners, wire brushes or steel wool on aluminum, because they strip the protective oxide layer and leave dark marks that cannot be polished out. Avoid leaving aluminum racks in contact with steel or salty residues for long periods.

Deep cleaning stainless steel racks

Stainless steel 304 tolerates most food safe sanitisers. Rinse thoroughly afterwards to avoid water spots and stray chloride deposits, and dry the frame if the rack will be stored for a long period. Never use hydrochloric acid based descalers in a room where stainless racks are stored.

Keep two spare casters and a set of fasteners in stock. A rack with one failed caster is a rack nobody wants to move.

Storage and handling

  • Store racks on a clean dry floor, not directly against a wet wall.

  • Never drag a loaded rack sideways, because that is what bends caster plates.

  • Push with your body weight rather than pulling with your back.

  • Do not stack racks unless the design explicitly allows it.

Repair or replace

Repair is usually the right call for casters, shelf clips, pan stops and small bracket damage. Replace the rack when the main frame is bent beyond straightening, when welds crack repeatedly at the same joint, or when corrosion has reduced the tube wall enough that the frame flexes under a normal load.

Need spare parts or a replacement rack

We keep caster sets, shelf clips, corner brackets and pan stops for every rack we manufacture. Send us the model number or a photograph, and we will confirm the parts and ship them with your next order.
